One-Pan Cod in Tomato Sauce with Peppers and Onion

Tender cod simmered in a rich Siciliana tomato sauce with sweet peppers and onion for a light, flavorful one-pan dish that’s both comforting and effortlessly elegant.

INGREDIENTS

2 cod fillets (about 6 oz each)
½ red bell pepper, sliced
½ yellow bell pepper, sliced
½ small yellow onion, sliced
1 cup chicken broth
½ jar Nonna Pia’s Siciliana sauce (about 1½–2 cups)
1–2 tbsp olive oil, for cooking
½ tbsp olive oil, for marinade
1 tsp garlic powder
1 tsp paprika
1 tbsp lemon juice
Salt and cracked black pepper, to taste
Crusty bread, for serving

DIRECTIONS

In a small bowl, mix olive oil, garlic powder, paprika, lemon juice, and a pinch of salt and pepper. Brush the mixture over the cod fillets and let sit for about 10 minutes while preparing the vegetables.
Heat olive oil in a large skillet over medium heat. Add the cod and sear for 3–4 minutes per side, until lightly golden but not fully cooked through. Remove from the pan and set aside.
In the same skillet, add a little more olive oil if needed. Add the sliced peppers and onion and sauté for 5–7 minutes until softened and slightly caramelized.
Pour in the chicken broth and Nonna Pia’s Siciliana sauce. Stir and let the sauce simmer for 5–8 minutes until slightly reduced.
Return the cod to the pan, nestling it into the sauce. Cover and cook for 4–6 minutes more, until the fish flakes easily and reaches an internal temperature of 145°F.
