Italian Poutine

INGREDIENTS

  • 2 tbsp olive oil
  • ½ cup diced white onion
  • ½ cup diced bell pepper
  • ⅓ lb hot Italian or fennel sausage, casing removed
  • 1 ½ cups Nonna Pia’s Siciliana Sauce
  • ½ cup water or stock
  • 2 lbs (about 10 cups) French fries, cooked by your preferred method
  • 2 tsp Italian seasoning
  • Salt and freshly ground black pepper
  • 2 cups fresh cheese curds
  • Freshly grated parmesan cheese, for garnish

DIRECTIONS

  1. In a saucepan over medium-high heat, warm the olive oil.
  2. Add diced onions and peppers, and sauté until the onions begin to turn translucent. 
  3. Stir in the sausage meat, breaking it up into small chunks as it cooks.
  4. Once the sausage is browned, add the Siciliana sauce and water, then reduce the heat to medium.
  5. Continue cooking, stirring often, until the vegetables are tender and the sauce has thickened slightly, about 10 to 15 minutes.
  6. Cook the fries using your preferred method, then toss them with Italian seasoning, salt, and pepper to taste.
  7. Transfer to a serving dish and scatter cheese curds over the top. 
  8. Spoon the sauce generously over the fries and curds, then finish with a garnish of freshly grated parmesan.
