Balsamic & Blue Cheese Figs

INGREDIENTS

  • 6 fresh figs
  • 1 tbsp olive oil
  • Nonna Pia’s Strawberry Fig Balsamic Glaze
  • ½ cup gorgonzola or similar mild creamy blue cheese, cut into 6 pieces
  • ⅛ tsp finely chopped rosemary
  • Freshly ground black pepper

DIRECTIONS

  1. Preheat the oven to 400 F.
  2. Trim the stems from the figs, then cut an X into the top of each one, slicing about three-quarters of the way down.
  3. Be careful not to cut all the way through.
  4. Place the figs on a parchment-lined baking tray.
  5. Brush them lightly with olive oil, then drizzle a touch of Nonna Pia’s Strawberry and Fig Balsamic Glaze into each cut.
  6. Transfer to the oven and bake for 5 minutes.
  7. Remove from the oven.
  8. Using a small spoon or the tip of a chopstick, gently fill the center of each fig with a small piece of gorgonzola.
  9. Sprinkle with rosemary and freshly cracked black pepper.
  10. Return the tray to the oven and bake for an additional 10 minutes, or until the figs are softened and slightly caramelized.
  11. Carefully transfer to a serving dish and finish with a generous drizzle of balsamic glaze.
  12. Serve as a savoury pre-dinner bite or pair with vanilla ice cream for an elegant dessert.
